This recipe was made twice over Easter. It is delicious. I have a Mother-In-Law who is vegan and she loved it. All of my family did. The longer it sits and marinates the better the flavor is! Thanks Sandra Lee! 5 Stars for sure!!!!

Made this salad & the chicken cutlet sandwiches after watching the show. I have two children under the age of 6 who loved both! My husband & I both agree this is something we could definately have several times aweek especially in the summer time. What a great combination of flavors & textures. I also doubled the amount of corn vs other incrediants (used 32oz bag & used cilantro instead of parsley (taking cue from cumin in the recipe. Only enough leftovers for my lunch the next day!~

I tried this salad. Easy to make, and inexpensive. First thing I will do (next time is either add more Corn, or only half the fennel. I hate onions, not crazy about fennel . . .However, the mixture of these with the apple, makes a nice nosh. Very good.
    Its a warm weather dish.
    Thanks Sandra

I love this recipe and can eat it by the bowl full, but it has such a unique flavor that I can see how some people wouldn't like it. I'm not a huge fan of fennel so I made it with only half a bulb. I took it to a picnic and it was hardly touched and I didn't hear a single comment on it. I'm guessing it's not for the masses, but I'll keep making it for myself.

I made this corn salad for a family get-together of 14 people. I made 1 1/2 times the recipe. I had to throw out more than half. I think there is too much cumin. No one liked it, not even me.!

I made this after watching the show, It was a great side dish. Nice flavors and textures with this salad. I never really tried fennel but was very impressed with it in this dish. Only thing that I thought that could have used less of was the cumin ( a little strong for me But all said and done I will definately make this again and again!!!!!!!

A friend made this for a dinner party/cookout last night. It was so good that I had to get the recipe to make for Mothers' Day next Sunday! This is going to go into the regular summertime rotation.

I was out of apple cider vinegar so I used champagne vinegar and I cut back on the fennel - we're just not fans. I used a little more parsley and special Himalayan pink sea salt. THIS IS DELICIOUS!!! Tasty, cool and refreshing and a very pretty side disk. Try it, you'll be surprised how good it is. And super simple to put together.
