Wanted to be more excited but this is just so-so. Did it exactly by the instructions. Carrots did pick up a little of the apple flavor, but there was no flavor at all to the cabbage. Thought I was going to one-up my wife's annual preparation using the instructions on the package. Wrong, again!
The potatoes were good and I'll use that part of the recipe again.

What a letdown. 8 hours in the slower cooker and my corned beef was still tough. And the apple juice seemed to have the opposite intended effect because my in-laws are Polish and never say 'no' to cabbage but they were not a fan of the taste of the veg that was cooking for a third of the day in the slower cooker.

(The carrots and the potatoes were good at least.

I am little confused with the low ratings. Common sense, I think would tell you that if you cook vegetables in a crockpot for 6+ hours they are not going to be crunchy. I too, normally like my vegetables on the crunchy side, but I decided since this was my first attempt with this recipe, I would follow it. I thought the vegetables were tasty, the carrots were soft, but not mushy. None of us found it too sweet. Juicy and oh so tender, but not sweet. I do think next time I will follow suit with one of the reveiwers and wait until the last hour or hour and half to put the cabbage in. The only change I made was I used the organic apple cherry juice I had on hand, it turned out great. The whole family loved it. My foster son requested I send left overs for lunch tomorrow. I will definitely use this as my go to corned beef recipe. The potatoes were great and the fresh parsley was just the right touch,

great recipe! boyfriend loved everything...and he's a little picky. i did add some apple cider vinegar ~1/4 cup towards the end of cooking after taste testing, which we liked. cooked on high for 5hrs and low for last hr...didn't get in the crock til 2pm but still turned out great! definite St Patty's Day repeat!

I made this recipe today and it turned out fab! I did not have any apple juice so I simply used 1 c of water. As I am not a "sweets" person..I prefer "savory" this turned out perfectly for my taste. I put 2 potatoes in with the carrots & onions..nothing was mushy..I was shocked. thankyou Sandra...so simple and easy I just might use my slow cooker more often now.

The whole family enjoyed this. I like sauerkraut, but this cooked cabbage was much better - tender, not as soft and sharp as sauerkraut. The apple juice made it just slightly sweet and delicious. The meat was great also, but I did feel the need to trim a lot of the fat before cooking it. The potatoes were excellent. Great St. Patrick's Day meal!

To a few of the reviewers who had problems: you do have to like cooked cabbage. There's no getting around that. Also, you should chop it coarsely. And as with any slow cooker recipe, there is some variation among crock pots. Some seem to cook faster, or slower. Mine worked out great and it cooked about 7.5 hrs. Guess I was lucky.

I made it with the following mods:
Used two bottles of Woodchuck Amber Cider and 1 cup of water with the included pickling spices as a brine for 48 hrs prior to making. I then drained the meat and cooked according to recipe with 2 additional bottles of Woodchuck amber and 1 cup of water. It was terrific! My wife loved the potato's too! Thanks SL!

Excellent recipe. I didn't put the cabbage in until the last hour of cooking and it came out cooked but not mushy. The corned beef tasted great I really couldn't taste the apple juice at all (I did buy 100% apple juice no sugar added there was no sweet taste as some other people have stated. What was particularly good was the potato's, very tasty, much better than boiled. I would make the potato's as a side dish for any meal again.

The corned beef is sweet from the apple juice; the cabbage and onion are very over cooked. I will not use this recipe again.
