Absolutely delicious! I made it exactly following the recipe. My husband, who normally doesn't like cabbage, loved this!

This was the first time I have ever made corned beef. I waited to long into my day to put it in a slow cooker so, I put it on the stovetop. I let it slow cook for approx. 3 hours, took it out and wrapped it up. Then added my carrots, onion and I even added parsnips to the cooking liquid. Once those were done I took veggies out and added my cabbage because all the good cooking liquid was still there. I cooked my potatoes as directed but I also added chives. I put the sliced meat and veggies in a prety dish and my potatoes on the side. My husband and I enjoyed a nice dinner together, as always! This was the easiest dish with LOADS of flavor. It was Delicious!! I will cook it again!!

Grew up eating corned beef and cabbage (still don't like the cabbage, but it adds great flavors and when I got married my irish husband didn't like it, so I never tried to make it. Now older and sons that like it, having tried it elsewhere, I tried this recipe, thanks so much, it was easy and delicious. The potatoes where an extra bonus as I fixed scrambled hamburg for my husband and we all got to enjoy them with our meals.

I've never made corned beef and I was having a St. Patrick's Day party. But, after reading this recipe and it's reviews I felt confident enough to try it out. I bought the package of corned beef at Costco. I added a whole bag of carrots and only one cup of apple juice. Put the vegies in the last 3 hours. Instead of slicing the meat, I shredded it and made it like a stew. For the potatoes I added a little bit of milk and whipped cream cheese and mashed them. Everything was gobbled up. Needless to say, it was a big hit! Everyone wants the recipe now. Thank you so much for the recipe and thank you to all who wrote reviews for me to decide on how to do it my way. You're the best!!!!

THIS WAS AMAZING! Super easy and it tasted wonderful!
@nikkinorfolk- It doesn't cover it at first, but by the end of cooking the liquid is at the top.

So far this recipe looks Awesome! Though i am worried...the liquid in the crock pot doesnt even come close to covering everything... is that an issue other people had? i dont want to add more liquid, but at the same time, i dont want under cooked meat.

    Any tips?

    -Cheers

That's not a dumb question. You should be able to find a pre- packaged corned beef brisket at the regular grocery store and it includes the spice packet. I've found the best brand to be "Swenson" but not sure if it's available in your area. Just look for a brisket with not too much fat and you'll be good to go. I have made this recipe several times and I actually prefer to cook the cabbage separately as I like it more crunchy than soggy (I just steam it on the top of the stove til fork tender.

I know this may seem like two dumb questions but I have never made anything like this before. 1. When the recipe calls for 3lbs of corned beef my butcher said for me to buy a beef eye round roast. Is this the same thing? 2. The directions calls for a spice packet. What is the spice packet's name? What is it? I have no idea what kind of spice I'm looking for. I hope you can help me out. I would really like to make this.
