The only ingredient I couldn't find at my local grocery store was the steak marinade (is this what some people are calling taco seasoning?. I found a southwestern whiskey steak marinade (different brand name that I used instead. Figured how different can it be. Anyway, I too only used 1 lb. of the corned beef and thought it was plenty. My end result was delicious! We'll definitely make it again and again. Was a quick breakfast that can serve many. I didn't find it to be salty either. In fact, we probably could have used a little salt and pepper on ours but it certainly wasn't necessary. Maybe my end result would have been different had I found the exact marinade the recipe called for so maybe I should stick with what I used the first time when I make it again. In our eyes, it was outstanding. Thanks, Sanda!

Bought only 1# (calls for 1-1/2 of good deli corned beef cut thick and I chopped it and got all the rest of ingredients ready. In the end used only half of corned beef I had chopped(1/2# and that was plenty. Also 2T of the steak marinade was way too much and don't know what that 1/8 cup of beef broth was supposed to do--nothing as far as I was concerned. Wouldn't make again.

I should have known better than to try and make a short cut to making hash. I will go back to the old fashioned way.

This is very good and very comforting. We had this for dinner on a chilly, rainy night and it was wonderful. I served with buttered toast on the side, and OJ to drink. YUM!

I don't like much "heat" in my food so I only used 2 teaspoons of the steak marinade and increased the worcestershire to 2 tablespoons. I also used chopped my peppers and onion. I had the corned beef sliced pretty thick, but I think I'll have it sliced thinner next time. otherwise we liked the result a lot and will make it again. Vegetable prep ahead of time was a bit time consuming but putting it all together and cook time was pretty quick.
