You can create up to five timers

Ingredients

  • 2 tablespoons sliced green olives with pimento
  • 2 teaspoons capers
  • 1 rib celery, finely chopped
  • 1/4 cup finely chopped red onion
  • 3 tablespoons mayonnaise
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon lemon herb seasoning (recommended: McCormick)
  • 2 tablespoons freshly chopped parsley leaves
  • 3 hard boiled eggs, chopped
  • 1 (16-ounce) bag pre-cooked and diced red potatoes (recommended: Reser's)

Directions

Combine all ingredients in a large bowl. Stir to combine. Serve immediately.

    Well, the other reviews scared me from trying the precooked potatoes, so I went ahead and bought 4 large red potatoes and cooked them myself.

    With the fresh potatoes, I found this salad to be delicious! It has a tangy flavor that is unique, and I don't know why some people say it's not salty enough. I think it has plenty of sodium from the capers.

    I actually hate olives and celery, so I left both of those out, and instead added a minced clove of garlic. So good!

    Next time I think I'll add some crumbled bacon to make it even better. I think as long as the potatoes are fresh, it makes a very good potato salad!
