    I did not have the cornmeal so I just omitted it. This was not the best eggplant I ever had but it was pretty good. I cooked it longer, as the others suggested and also removed the skin. I think I was skimpy with adding the sauce which would have helped the flavor. When I reheat the leftover I will add the rest of the sauce.

    !Sorry, Sandra. Had high hopes for this but what you call crispy, I call uncooked cornmeal mixed with breadcrumbs. So disappointing. Going back to frying my eggplant and making my own sauce.

    I personally love eggplant, but the rest of my family not so much. So I didn't exactly tell them that it was eggplant. I changed it up a little by cutting the skin off, cutting it thin long ways, and fried it. I also didn't have a long enough cassarole dish so I layered it in a smaller dish. My children loved it!!!! And got my stubborn hubby to say "it's alright" And that's a lot from him especially since he completely dislikes eggplant. After battering it and out of the fry pan with a sprinkle of salt it was really good, too!!! I added more seasoning to the sauce to my taste, it is a true keeper!!! Thanks Sandra Lee

    "AMAZING"....my family loved it, so easy. I did use a can brushetta sauce instead of making one. I added Cajun seasoning to the flour and breaded some shrimp....so good !

    AWESOME! I have NEVER liked eggplant.....until I tried Sandra Lee's recipe. This is wonderful, the rich bold sauce really kicks it up a notch, and cheeses bring it home with a wow flavor. Eggplant is so nutritious and so this recipe is a keeper! Also, a fancy display for the table.

    Yes, our family likes eggplant, but frying is so messy. I was pleasantly surprised that baking the eggplant would turn out the way it did. I found that the Italian seasoning was a little over-bearing and I will tone that down next time I make it....and I will definitely make it again. I also do not like very spicy so I put in very little of the hot pepper flakes. Very good and my family enjoyed it.

    This was my first time making and eating eggplant and this was a fairly easy recipe to follow. The sauce was very tasty with just enough spice to it and the seasoning on the eggplant was scrumpcious but i have to admit that i did fry it in olive oil and finished it off in the broiler. This will be a regular dinner in our household also my two teens and toddler loved it, i served it along with a ceasar salad and italian bread with evoo/B.vin

    Started making a Bobby Flay recipe but the sauce portion of the recipe took much longer than was suggested. And the eggplant portion looked time intensive as well.So I frantically searched the website for a faster recipe for the eggplant. I was very pleased with this! Plus, I was impressed how tasty it was without having to fry the eggplant.
