    This was very tasty. Nice and chunky as I used the diced tomatoes. The one thing I wish I did was left the eggplant baking a little longer. Or maybe I should have peeled the eggplant so that it cut a bit easier. Either way, for a first try, I think it went very well and I will definitely do it again.

    Quick, easy and delicious. The only thing I would do differently next time is peel the eggplant as I do not care for the tough skin.

    I was in a hurry, so I used sauce from a jar. I also used panko bread crumbs. It turned out awesome! I will be making this again. Thanks Sandra for your great ideas!

    This recipe is absolutely delicious. I changed it a bit to suit the ingredients in my cupboards; I seasoned the flour with 'Emeril's Essence,' (hope that's okay to say, combined the Italian bread crumbs with Japanese Panko Flakes (for extra crispiness. I like a lot of sauce, so I doubled it by using crushed tomatoes and tomato sauce. Also, I always increase the onion and garlic (to about 1 head... no such thing as a 'clove,' in this household. Oh! and since I didn't have mozzarella, I used Pepper Jack. Yum!

    Found this recipe today while searching for Healthy eggplant recipes. This is my second time cooking eggplant and I really enjoyed this one! The only thing I'll change next time is to add less red pepper flakes - too spicy for me. This will become one of my "staples". Easy and quick to make!

    Made it tonight for dinner and it was very tasty along with the pasta. kids didn't even think it even tasted like eggplant. One of which doesn't like eggplant. Will make again. Maybe less italian seasoning and flakes.
