Maybe this dish isn't 100 percent authentic, but many of us do not live in communities with a Cuban population. Therefore we would have to improvise with the ingredients. I am an Italian American. If I got all up in a sissy fit every time some chef improvised with italian food I wouldn't have time for anything else.

This dish was delicious and easy to make! It was packed with flavor and reminded me of Spanish Rice.

you have the rice, chicken, onion and green peppers right. Cubans do not use chili powdwer you have use some yellow powder called Bijol for coloring depending how yellow or ornage you wnat the food and you do not brown the chicken first, also you do not put tomato sauce in arroz con pollo. Now if you use this recipe you have to take Cuban out of the name and the cooking instructions are wrong. I don't know where your research comes from but you have to do alittle more of it.
