I love this! I personally feel like the addition of bell pepper slices on the sandwich is a necessity.
I also felt like the bean spread needed a little something so the juice from 1 large lemon wedge hit the spot.
I read online that white bean spread lasts up to 2 weeks in the refrigerator, which is a really good thing b/c I'm pretty sure I will always have some of this around.

10 Months ago,I gave up Mayonnaise.Tired of reading if Soy was included.{Allergic}.This fits My Needs by replacing the Mayonnaise w/a White Bean style Hummus.I find this refreshingly Light and No ER! I like Mayo,just not "cut" with Soy as so many are now. Just have this "spread" very Cold.Season to Your tastes.Like the Optional Choices given that keep the Beloved Tomato forefront.Fresh Summer Cucumbers too!A delight.Healthier with or w/o Whole Wheat Bread.

Every year I patiently wait for mid summer to arrive with it's plentiful harvest of juicy red tomatoes and crisp cucumbers! Then for weeks I practically live on tomato and cucumber sandwiches. Two slices of hearty oat nut bread (updated from the white I grew up with slathered with mayo topped with thick slices of toms and cucs seasoned with salt and pepper. Although Sandra's recipe is undoubtedly more nutritious you can't beat the "classic" sandwich we all grew up with! The white bean and roasted garlic humus was tasty and I'll use it again just not in that way. Something don't need improving!
