    This is soooo good!! The second time I roasted in the oven for about 20- 30 minutes on 400, just because I was lazy. It turned out really really good!!

    We love to grill out and finding this recipe hit the spot for our family. I substituted peanut oil for the sesame oil. Next time I will slice the eggplant more thinly (recommend 3/4 - 1/2 inch slice for less chewiness.
    Thanks for the hint of soaking in salt water before preparing eggplant for the grill. I will try that next time. The mint was a good "eastern" taste.

    I salted the Eggplant before grilling and sprinkled curry powder on one side. I then just brushed with Sesame Oil and I also used dried mint instead of fresh, and this was a great dish. Both my wife and I loved it.

    I haven't made this yet, but wanted to comment that she used chopped cilantro and not mint on the tv episode. She had chopped the cilantro for the cucumber dip and used half to sprinkle on the baked eggplant.

    I love eggplant almost anyway you serve it up. This recipe was good( not great, but next time I will definitely not use sesame oil. The sesame oil flavor was overpowering for this recipe and takes away from the taste of the curry.

    To help get rid of the bitterness of an eggplant, soak for 10-15 minutes in salt water.

    I made the eggplant tonight along with the Tandoori Chicken, Pita Chips and Tzatziki dip (for that I used Emeril's recipe as I am very particular about this type of dip. My husband and I like curry so that's not a problem but the eggplant tasted very bitter though I believe it was as cooked as it well as it could be. I made it on top of the stove using a grill pan. I'll probably try it again on the outdoor grill and vary the season to see if it is a keeper or not. I'm always willing to say this may have been "user error" but it is always possible that it was a "design flaw" as well. ;
