    Quick and easy AND DELICIOUS. I just added some mini chocolate chips in the cake batter and on top of the ice cream cake. MAKE SURE you use heavy cream for the ganache, not half and half or light cream. The chocolate won't hold together as well. It's EXTREMELY time consuming if you don't have 3 cake pans, 2 for the cake batter and one for the ice cream.

    I made this for my daughter's 18th birthday instead of buying yet another store bought cake. I used some of the chocolate ganauch (sp to dip strawberries to decorate the cake. It was a huge hit! And the presentation was fabulous! Plus we had the best of both... cake AND ice cream!

    My wife made this last year, surprised her girlfriend for her birthday. Her friend thought she ordered it from a supermarket. It was so easy, and everyone was so surprised it was home made. I was so proud of my wife. It was so yummy. She still has the receipe among her collection.
    Keep them coming, my wife loves you and all your easy recipes.

    I saw this recipe and thought it looked really good, but also thought it would probably look better than it would actually taste. I was pleasantly surprised! The only change I made was I followed the measurements for the ingredients on the cake mix box instead of in the recipe, just to be sure it wouldn't be too wet. It was easy to put together, and the cake held up in the freezer really well. The ganache was also nice - not too sweet with the ice cream.

    I watched the video two times and decided to make this for my birthday. Since my daughter has an egg allergy, I eliminated the eggs from the cake and substituted 2 teaspons of white vinegar for it. The concept is fabulous and everybody loved it. It was harder to bind the cake (without the eggs but the idea of homemade ice cream cake (with chocolates and cookies and cream was so good. I also improvised on the icing. I drizzed the remaining ganache on top of the cake so it had a really appealing, yummy look to it. Sandra, thank you for giving us really good ideas that work!

    Very good recipe! The only thing I changed was the ganache! I added a little of vanilla extract. After I had finished the cake I still thought it needed something to give it a little boost. To me it was just cake and icecream and we all know you can have that anytime! So After adding the ganache and everyone had a piece everyone agreed it needed something else, so I made a homemade white birthday cake icing! I must say it made such a difference and is so so so good! If you do decide to make a white birthday cake icing I would suggest using heavy whip cream!

    I have made this cake for my daughter's past 3 Birthdays. She loves it and requests it every year. The only thing I changed is the ice cream flavor to mint chocolate chip because that is her favorite. I have taken cake decorating classes and know how to make all kinds of decorations but I get the best feedback for this cake. If you try it you'll love it. Happy baking and Happy Holidays.

    I made this cake for my husband's birthday today and we just finished eating it....(and everyone just left. EVERYONE raved over the cake!! They ALL loved it!! It was unbelievably moist and not too sweet which was such a relief with all that chocolate.
    It was incredibly easy to make as well! I used a 9" springform pan for the icecream so that made it even easier to remove and place on top of the layer of cake. I couldn't find a good quality cookies and cream icecream at the store I had shopped at this morning so I found a "chocolate chip cookie" icecream instead (no, not cookie dough, just cookie. It worked just as well. I can't wait to try out other flavors of icecream! Maybe chocolate chip raspberry or Coffee icecream for a Mocha cake?. This recipe will definitely be used over and over in our family!
