    Made this for our father's day bbq. Made a little over 5 lbs. Most of it was gone within the first five minutes and everyone was fighting over the last few pieces. Used olive oil instead of canola, just because that's what I had. Every time I make this...it is a HUGE hit.

    The chicken is so tender. The flavor penetrated the meat beautifully. It was not over-powering. This recipe has found its way into my book. I love it!

    The first time I tried this recipe I didn't have all of the ingredients so I made a few herb substitutions. I also forgot to add the oil to the marinade and added it just before baking. It turned out spectacular! The 2nd time I followed the directions exactly and it wasn't nearly as good. Today I'm going back to my original method. I think adding the oil later really let the flavors soak into the meat. I also added more lemon juice and some rind, and a T of Emeril's essence.

    I tasted the "rub" prior to putting on legs. Was sooo good. Once chicken was cooked, it was disappointly very boring. I marinated it for a good 7 hours too!

    I used skinless boneless breasts & thighs as I had those in my freezer already. I had no issues with flavor. Both types of chicken were moist & flavorful. The lemon was light, not overpowering (I may have used more herbs than she did though. Coupled with the grilled flat bread & some steamed veggies, a nice light fabulous meal!!!

    We made this today and it was just wonderful! It's easy and using the drumstick, cheap. We also made the flat bread and it was great. This goes into the keeper file.
