    I made these and the cookies were too hard to bite into. Not easy to eat at all! Will buy already made ice cream sandwiches next time.

    At first I was a little skeptical, but I tried it anyway. I couldn't find just peach ice cream so I used Ben & Jerry's Peach Cobbler Ice Cream. It was simple to make and absolutely wonderful to eat!

    After seeing some of the reviews, I made the following changes before making these cookies:
    Omitted the crystallized ginger; used 1 teaspoon freshly grated ginger and 1/8 teaspoon ground ginger. I baked these for 12-14 minutes in the oven.

    We LOVE ginger and loved these cookies in the winter time. Makes great gifts too!!

    I didn't know how to do the grill method, so I just used the oven, and when the cookies came out, I put one on a plate with some peach ice cream on top : Very good! Oh, and I used fresh ginger instead of the store bought minced kind.

    I thought this recipe was good, but instead of using betty crocker cookie mix, I used my own recipe for ginger cookies. It turned out really well! I also tryed different kinds of ice cream. Try this next time if you are in an adventerous mood.
