Ingredients

For Shrimp Grab and Go Skewers:

For Fruit Grab and Go Skewers with Yogurt Honey Dipping Sauce:

  • 12 seedless grapes, green or red
  • 1 mango, peeled and cut into bite size pieces
  • 12 strawberries, tops removed
  • 1 (6-ounce) container vanilla yogurt
  • 1 tablespoon honey
  • 12 (6-inch) bamboo skewers

For Shrimp Grab and Go Skewers:

Directions

Hold the shrimp up so it looks like the letter C, with the tail making the bottom of the C. Push the skewer through the tail, stopping when the tip of the skewer hits the middle of the C.

Skewer 1 grape tomato and 1 basil leaf. Then, push the skewer through the top of the shrimp, so the grape and basil are enclosed inside the shrimp. Repeat with remaining shrimp, basil and tomatoes, placing each finished skewer inside a plastic storage container.

Place in the refrigerator until you're ready to go. Five minutes before serving drizzle skewers with dressing.

Skewer 1 piece of each type of fruit onto the skewers starting with the grape then mango and finally a strawberry. Repeat with remaining fruit, placing each finished skewer inside a plastic storage container.

In a small plastic storage container add yogurt and drizzle the top with the honey. Refrigerate until you're ready to go.
