This is an AWESOME recipe that is super EASY and QUICK! I did make a few changes to the recipe.

For the chops, I got thick cut pork chops and modified the rub a little from the recipe. Instead of using so much chili powder I halved it and added 1 tbsp of all spice as a substitute - it went really well with the sweetness of the peaches. I also used some olive oil and some canola oil instead of all canola. I put the rub and oil on about 40 mins before grilling them.

For the peach salsa - I used 4 smaller peaches for 3 large chops and that was the right amount. I grilled the peaches for a few mins to warm them up before making the salsa. I also added a pinch or two of red pepper flakes to the salsa because it needed a little something extra.

This was a huge hit and we'll definitely make it again given how delicious it was for the quick prep time!

Peach salsa? OMG! Delicious! I do have to say though, I bought my peaches at farmers market which makes a difference.
The pork chops I broiled. I broil everything. What I would change was less spices. They were a bit too salty/spicy. so same recipe less of it.

This dish was amazing; however, the pork chops were very salty. Next time I make this dish I will cut the salt at least by 50%. I did not have peaches so I used nectarines and the salsa was amazing. Very easy to make. I made a side of roasted brussell sprouts with garlic, oil, toasted pine nuts and dried cranberries. Meal was delicious.

I felt a little weird putting so much salt on the meat! I did cut the salt back a bit and I didn't have peaches, so I used mangos and it was fantastic! I loved the mango salsa. I am sure it would be great with the peaches. I used the left over salsa for an appetizer the next day and the salsa seemed even better. I also used thicker, center cut pork chops. I have never piled salsa on meat like that and I really liked it.

What are a few of my favorite things? A wonderfully tasty meal that is quick and easy to make. Limited ingredients that don't need to be measured because personal taste is all that is needed, flavors that compliment each other perfectly and a happy, happy husband that loved every bite.
Also, I used canned peaches which made it even easier. I am not a big meat eater and I ate the entire thing.

Love this recipe, I actually add some additional spices to the chili powder for some kick . 1 tablespoon cajun seasoning, 1 tablespoon brown sugar and 1/2 tablespoon garlic
