Ingredients
- 1 cup white rice
- 1 tablespoon canola oil
- 1 medium yellow onion, diced
- 1 medium zucchini, diced
- 1/4 teaspoon red pepper flakes
- One 4-ounce slab deli ham, diced
- Kosher salt and freshly ground black pepper
- 2 large eggs
Directions
Cook the rice according to package instructions.
In a large skillet over medium heat, add the oil. Add the onions, zucchini and red pepper flakes. Cook until the vegetables just begin to soften, 3 to 4 minutes. Add the ham and let cook another 3 to 4 minutes. Season with salt and pepper.
Crack the eggs into a bowl and beat them, adding a pinch of salt and pepper. Push the vegetables to the side of the skillet, add the eggs and cook until just set. Mix the eggs and vegetables together.
Add the rice to the skillet with the vegetables and egg and cook, stirring frequently, until the rice is hot. Reserve 1 cup of the cooked rice for the Round 2 Recipe Stuffed Cabbage Rolls, or another use. Transfer to a serving dish and serve immediately.

I made this with the Asian Sloppy Joes as well and it was amazing. I didn't have any problem with adding the eggs and the dish looks amazing and tastes even better. Can see that it would go with so many other meals as well and like Sandra said, you can add any vegtables that you have on hand. A very tasty dish and another way to get them vegtables into the family as well! Can't wait to try the Round 2 recipe with sloppy joe mixture and this rice later in the week. This is fantastic.

I have NEVER made fried rice...if I knew it was this simple I'd have done it more instead of buying the pre-made ones. I did tweek a little...added 1/4 tsp sesame oil, 1 tbsp rice vinegar, 1 tbsp soy sauce. YUM
