I know I would like this.Hubby for some reason doesn't like pork lion in the longer form in the oven,he likes it cut up in slices and baked.I usually cook mine in a pan then add bbq sauce with pineapple.

This recipe for the Herb Roasted Pork with Honey Dijon Mustard....very yummy!! I'm tired of cooking the same old recipes...this one really put an easy twist on our dinner menu last night!! I also made mashed pot with broccoli, and of course the hawaiian dinner rolls. GREAT DINNER!!

i used bone in chops, i had 4 of them so i didn't need to cut them . this came out very good .i also put Dijon mustard and honey mustard mixed together and it came out really good , i didn't have the herb bland so use my own spices. i didn't have the onion pearl onions so i just use a onion chopped up small for the sauce and it came out good... i will be making this again .

I'm in college and just now learning how to cook. This recipe was so easy for me to follow and it turned out AMAZING!!! I used half of a red onion though instead of the pearl onions. But it still turned out great! My room mates were jealous!

I think I should have done what someone else did and used bone-in chops. The boneless pork loin chops were too thick and a little chewy. I didn't have the herb blend, so just used tarragon. Worked well with honey mustard. Sauce was nice, too. I could see this working well with chicken.

I would never have come up with this recipe, but now it's a favorite. I would even serve this at Thanksgiving along side the Turkey for an extra special dish.
