    These are really easy and delicious. If you mix on high speed of an electric mixer, the sugar blends in completely. Also, lime curd is available at Harry and David.

    Very easy to make and no baking involved, which is good beacuse I don't bake well. If not making individual cheesecakes and using a regular size crust, it is necessary to double the recipe. -- Shopping tip - you will find the curd in the jelly/jam section of your grocery store.

    I made this and everyone loved it even my picky kid! I made a whole pie because they did have them at the store I went to. Will make it again for sure.

    I brought this to a pool party yesterday because I'd already made it and hadn't gagged on it. The general consensus was that it wasn't a complete waste of ingredients, but it wasn't something we wanted to eat again. I found lime curd at Trader Joe's but it is too mild to go well mixed in like this. It would have been better to find a standard Key Lime Cheesecake recipe and top it with the lime curd, then whipped cream. And that is what I'll do next time. This wasn't worth the effort to make it a second time.

    This recipe totally missed its mark. It tastes nothing whatsoever like cheesecake. It's just cold cream cheese with jam. VERY DISAPPOINTING!!
