    I have made this cake exactly by the recipe several times. Each time I get rave reviews!! People at work now request I make this cake when we have special occasions. Thanks Sandra for such an easy and tasty recipe!

    This is a great cake! I bake quite a bit, and I am constantly looking for different and unusual recipes. The pineapple (juice included makes it so moist. The only thing different that I did was add toasted coconut to the top of the cake after it was frosted. It gave it a nice texture and great flavor.

    It was yummy! And to the others who weren't sure about adding the juice from the crushed pineapple, add it! It DOES make a difference in moistness. When it's ready to serve, just make sure you slice it THINLY, lol. Like I and some others have said, it's very sweet, and dense. But it IS 'oh so good'. Thankyou, Sandra!

    I saw this show yesterday and though I haven't made it yet, she only made this as a double layer cake. After taking them out of the pan, she put them on a plate and put them in the refrigerator to cool to make them easier to handle when frosting later. Also, she used 3 containers of frosting and added a teaspoon of vanilla to them before frosting.

    i used unsweetened coconut, as others had said it was too sweet, and made my own cream cheese frosting with less sugar. Really moist and very tasteful.

    I really love this cake recipe! The second time I made this cake I accidentally forgot to drain the juice from the crushed pineapple and instead I dumped the entire contents of the can in the bowl. I was afraid that the extra liquid would make it a big soppy mess, but to my surprise it made this cake extra moist, flavorful, and delicious! I also take the chopped pecans and grind them in a nut grinder so that they are slightly smaller and make the cake a little less crumbly.
    The last change that I made to this recipe is that I also add the coconut to the outside of the cake to make it even prettier and give it more flavor.

    I get a requests for this cake all of the time, and it is always an event favorite.

    I had watched Sandra make this on her show and instantly saved it to my recipe's. I made it for my husbands birthday but made a small change after reading the "crumble" comments: I added 1/2 a cup of oil. It moistened it considerably. My husband LOVED it!

    While I love Creme Cheese frosting, I will make my homemade version next time around to cut down on the sweetness. ;

    My frosting: I mix creme cheese, vanilla, powdered sugar, & whipped creme --- add amounts to your liking. I don't have a big sweet tooth so I don't make it really sweet.

    Crumbling, flat tasting mess!
    Sandra should stick to table decorations!
