    I haven't tasted the cake yet - it's sitting in the other room, but I am not much of a cake eater.
    First off, there are several differences from the show's recipe. She uses 3 cans of frosting, not 2; she uses 1/2 cup of pasteurized egg whites; and she uses an undrained can of pineapple.
    DO NOT whatever you do spray your cake pan with nonstick cooking spray. The cake WILL STICK and you will be very upset. Take the extra 2 minutes and grease and flour your pans with shortening (rub shortening with a paper towel all in the bottom, sprinkle a couple teaspoons of flour in the bottom and shake it around, then tap it on the counter 5-6 times and toss the excess; be sure to fill any blank spots.
    I would also sift the cake mix before mixing.
    Also, I baked mine in 9" pans and the bake time was reduced to 26 minutes so be sure you check the cakes about 5 minutes early even if you think your oven doesn't run hot.

    sandy, adding extracts to tub frosting in no way, makes it taste freshly made. my husband is 100 percent italian and has never seen a cake like this, perhaps, that's because he IS italian and has only had authentic italian dishes. simple sandy has run out of ideas.

    Even those who think cake has to be chocolate will love this one. This cake is rich and moist and filled with nuts, pineapple and coconut.

    This is a fast cake but I remembered
    the pineapple juice going in the
    cake on the show. The recipe called
    for draining the pineapple and the
    cake did not seem moist enough.
