I made the lemon mixture as instructed, however, using the small box of sugar free instant lemon pudding (1 oz. or 28g pkg.. It's very much like a canoli filling. Rather than making the honey crisp wonton wrappers, I served the lemon mixture over vanilla ice cream with a few frozen blueberries and two crushed ginger snaps per serving. Very tasty!

Try Plain yoghurt with lemon curd. Seems to work and easier to prepare.

I liked this recipe - the filling is soooo delicious with the ricotta. However - the wontons seemed a little too crispy for the consistency of the filling. I'd like to try it again with some kind of soft cookies....

My 4 year old watched this episode and were excited to make this, good thing I read YOUR reviews first. Now after making it I just had to chime in hoping someone from her production staff would read this and fix it!!! First, you have to bake the wontons a bit longer so that they are crispy.
Second I read all your warnings about the qty of pudding and ricotta cheese. So I just followed the pudding instructions on the box (I used the large box and folded in some sour cream to take away the artificial sugar taste. Pudding was great!!!! Keep adding until you get a rich taste without the after taste. Skip the ricotta.

I decided to make my own whip cream EASY and just added some lemon zest.

It turned out great but was not her recipe. I would have to agree with the other reviewer who just used regular pudding so you don't have to fix the after taste.
    I made my own

I was excited to try this recipe since it looked so tasty. As others mentioned, the filling mix does not come in 3.4 oz packages so I added a "true" weight of 3.4 ozs of the mix. The mixture gummed up and almost killed my Cusinart! I added milk and lemon juice to thin it out but the taste was still a little off. The won ton part tasted very good. Something must be off about this recipe!!!

I love lemon but something just didn't taste right. Maybe it was the lemon zest. I tried adding Splenda but that didn't help. I still love the majority of Sandra's recipes, however!!!!!

Based on my previous use of wontons, I pan fried the wonton, let sit on paper towels...then made the recipe. Added a bit lemon juice to thin and flavor the filling; and used regular instant pudding. Wished I had used some fresh fruit as garnish...

Followed the recipe exactly when I first made this. It was good, but not great. Thought that ricotta was an odd ingredient because of its saltiness. Did some tweaking and tried again using marscapone cheese instead of ricotta, regular not sugar free pudding, regular sour cream and heavy whipping cream. Results much better and tastier. I can't see preparing or eating a dessert once in a while that's not loaded with calories. That's what dessert is for. This is served at a very pricey restaurant where I live and I've been trying to recreate it for two years. If you were dissapointed the first time, try again. You won't be dissapointed!

Had a tea party and this went over terrific. I just added a couple blueberries to the top of whipped cream. Thanks so much for the recipe. It really was a hit!

I didn't care for the texture of the mix, and the won-ton wrappers didn't work well either.
