These produced the lightest, most flavorful cupcakes! My entire family said they may be the best they've ever had. You'd never even know it was only 'semi' homemade!

Yummy. I used the apple corer that someone else had mentioned....worked wonders when filling the cupcakes. I also saved the pieces and used them to fill in the hole in the top after filling. I also only use toasted coconut as a topper.

Loved this recipe! I couldn't get coconut milk, so i used regular milk and added some coconut extract...WOW amazing!

These cupcakes were great! Very moist and easy to make. They are bit more lemony than coconut flavor - but the flavors go very well together. You don't need the yellow food coloring. Mine were yellow enough.

I made these cupcakes for Easter and everybody loved them, I thought they were too sweet, but the presentation is very nice, I topped each one with either a small slice of lemon fruit slice or a yellow jellybean, another secret to share, instead of cutting a small slit to fill the cupcake, use a apple corer, works and is easier to fill cupcakes.

These are truly fantastic!!! Really easy to make. Made them for my daughter's 2nd birthday, I got complements all day. I am not much of a cake lover, but these were very light and very moist.

These cupcakes are really good! They are light and moist and taste so good. I added a bit of lemon extract to the batter to amp up the lemon flavor. I added a piece of candied lemon to top off each cupcake and they looked so pretty. My boys loved them so I know that I will definitely make them again.

well I haven't tried it because it says 13 cups of veg oil? and 12 cups of coconut? there's gotta be a mistake here. I hope they fix it.
