Very nice overall. I added a cup of oatmeal for added nutrition and a bit of maple flavoring to add to the maple aroma. Only thing I'd change is to add more powdered sugar to thicken the frosting. As it was, I used a cup and a half and it still came out as more of a glaze.

I made these to take to my ladies group. They were a real hit. The taste was great. I only got 10 out of the mixed ingredients. I had to increase the cook time to 20 minutes and increase the amount of powdered sugar for the frosting. It was too runny for me. I also increased the amount of vanilla extract. One cap was not enough for my taste.

Great recipe. I love Sandra and her shows, but a capful of vanilla extract equals a HALF of a teaspoon, not one teaspoon as she has stated in many recipes. Thanks for all the great recipes, Sandra!

More a muffin than a cake. The icing makes it, while keeping it not too sweet.

I made these into mini muffins, baked at a lower tempurature, they came out a little dry. But I like them a lot, the frosting is perfect.
