These were excellent - I added fresh lime wedges for a last minute squeeze at serving time.
For years, I've also grilled skewered shrimp that I marinated for 15 minutes in a Ziploc with the same type of marinade (any longer and it "cooks" the shrimp in the bag before grilling. Huge hit.
The same marinade is great for poaching salmon too.
For all the items, always serve with the fresh lime wedges and Sea Salt for that extra "Pop"!

This recipe is awesome! I hosted a barbecue this weekend and these were devoured!! Everyone asked for the recipe. I think it would make a great marinade for shrimp, too. Super easy to make. I used Sauza tequila and Bacardi frozen margarita mix. I am going to bring these to another cookout this weekend and will bring copies of this recipe because I know the recipe will be asked for!!

This is one of my favorite summer grill recipes. Can be used as an appetizer or main course. Highly recommend it.

I tried these for an appetizer party and made chicken "bites". I cut the strips in half and also used frozen limeade since I couldn't find frozen margarita mix at my store; it was delicious. I poked the chicken with a fork a few times before cutting the strips to allow the marinade to be quickly absorbed into the chicken, and let them marinate for several hours. I grilled these without the skewers, then pushed some shorter, cute knotted bamboo skewers into the little "bites" after they were cooked. I placed them on the platter--not only did they look great, but tasted great too,I may add a little honey to the marinade next time to sweeten them and allow them to carmelize even more! I used a small container of Tones chicken seasoning found in the spice aisle. Thanks, Sandra!

This is for Linda from Arizona...the seasoning she's talking about is "McCormick Montreal Chicken Seasoning." As for this recipe, I would definately recommend it to everyone. I served it w/grilled fruit & rice.

I doubled the recipe and they were gone in minutes!! I actually ended up baking them in the oven instead of grilling them because I didnt have access to one. I baked them at 400 degrees for about fifteen to twenty minutes, turning them half way through. For a dipping sauce I used a dressing that I found at Trader Joes (one of my favorite stores its there cilantro dressing. (Which you can find in their refrigerated section next to the lettuce and veggies It went perfect with the skewers!

I have made this recipe 4 times now. These chicken skewers come out so juicy and tasty. The frozen margarita mix makes such a great marinade. I have found that frozen limeade (99 cents at wal-mart works just as well. I have made the recipe with Tequila, with no alcohol, and with half cup of lime beer (all I had on hand at the time -- and my favorite was with the lime beer! If using tequila, I'd go with half of what the recipe calls for (it does seem to overpower if using the full amount. Or just try lime beer instead, that's the best! I also recommend adding a TBSP of honey to the marinade, for an extra kick of sweet tanginess. The seasoning I've used is McCormick's Montreal Steak seasoning, and it was perfect. I've cooked the skewers both on the grill and in the oven - they're great either way. Try this recipe! It's an easy, fun, inexpensive crowd pleaser!
