    I normally prefer beef in Mexican dishes but this was delicious. I added diced jalapenos from the jar otherwise I followed the recipe as written. The topping sauce us outstanding. Thank you Heather and Sandra!

    I absolutely loved these enchiladas! I love how Heather's recipe is so easy, yet delicious. The sour cream sauce was fantastic! I'm making them tomorrow!

    Would be good to know can size of the sauce. Used rather large cans and got enchilada soup. Warehouse store shoppers beware! Use small cans. Sauce should coat the enchiladas - not drown them.

    This recipe was easy and delicious. I made some modifications though.
    Instead of using all enchilada sauce, I subbed tomato sauce for half of it. Also I pureed a can of green chiles and added that to the mixture.

    My only complaint was that the sauce was too runny-adding the spices to the regular sour cream might have worked better.

    Overall this was a quick and great semihomade recipe.

    I made this recipe for dinner tonight, and it was very easy to make, and it did turn out well. One change that I will make to it next time is to wait to add the last cheese on top of the enchiladas until about 10 minutes of cooking remains so the cheese doesn't get hard and crunchy but stays soft and cheesy.

    " My daughter and I mad this recipe while she was down visiting from Louisiana we added green chillies to ours and we thought it was very tasty.
    The only other thing we did was added more sauce.

    My family and I love Mexican food and I love using new recipes from the Food Network. But this recipe was awful. It had little flavor, and just didn't impress at all. This was a waste of time and food.
