Ingredients
  • 2 pounds cubed potatoes, cooked
  • 3 to 4 tablespoons mayonnaise
  • 1 tablespoon diced pickled jalapenos (recommended: La Victoria)
  • 2 scallions, sliced
  • 2 teaspoons finely chopped fresh cilantro leaves
Directions

In a large bowl, combine all ingredients. Gently fold together and serve.
