    This was a good recipe, but just didn't pop for my family. The herb butter was yummy and I will be using it for other potato recipes I have.

    I make mine with an olive oil, minced garlic, rosemary and pepper mixture (that I refigerate for a bit to let flavors meld that I pour on before roasting. I also LOVE the sweet potatoes in this (the white, not the red - I tricked the guys in my family into eating them this way since they are indiscernible from the russets. Parboiling is a must and if you're like me, you'll put them under the broiler for about 3-5 minutes right before serving so they're extra crunchy on the outside :

    Delicous. Sandra was right, parboiling the potatoes before roasting them in the oven is key. In the past I've tried roasting potatoes without boiling them and I ended up with soggy potatoes that wouldn't crisp. This recipe left them smooth and creamy in the middle with a crunch on the outside. The mix of potatoes is not only a nice change, but I was able to sneak in sweet potatoes that my family "don't" like. The herb butter was a nice finishing touch. This recipe is definately a keeper.

    I made this for Christmas Dinner and EVERYONE loved it! This will definitely become a part of our holiday meal. Making the round two hash for dinner tonight.

    MMTaylor, I saw her make this recipe on TV and you do NOT peel the potatoes. I just made this recipe and it's amazing! The only thing is that I use one kind of potato if I don't have all 3 and it's still yummy!
