Ingredients
- 1 tablespoon canola oil
- Reserved chopped onions from Cuban Chicken and Rice
- Reserved chopped peppers from Cuban Chicken and Rice
- 1 teaspoon chopped garlic
- 1 teaspoon chile powder
- 2 (15-ounce) cans black beans, drained and rinsed
- 2 cups chicken broth
- Reserved roasted pork from Cuban Sandwich, chopped
Directions
In a medium pot over medium heat, add the oil. When it is hot, add the onions and peppers and cook until they begin to soften, about 5 minutes. Add the garlic and chile powder and cook for 1 minute. Add the beans and broth and bring to a simmer. Cook for 10 minutes. Add the pork and heat through.

I thought the recipe was good but I did add a couple ingredients. I cut the recipe in half (because of the amount of pork loin I had left over and added 1 teaspoon of tomato paste and before putting in my serving bowl I stirred in fresh cilantro. After I put in bowls I added a drop of sour cream and cheese. My husband said it was one of the best things I have ever made.

Loved the rest of the recipes from this ep but this was not good, I couldn't finish it.

Great flavors! I doubled the chili powder and the garlic but overall it was pretty good!
