I had company over for lunch and served this with tomato basil soup. The sandwiches were good and very filling....I pressed them in my panini maker. Not having enought time to make my own pesto, I purchased some from a local Italian restaurant. Next time I will be sure to add more salt to the chicken while cooking...it will bring out even more flavors to the sandwich.

Tasty and easy!! I bought premade chicken breasts from the Market Street deli and sliced them thin - perfect. I think I'll use a tad less sauce next time.

To the girl from San Acacio: the rating system on here is for the TASTE of the food, NOT whether you can afford the ingredients. If you want to save money and buy whole chicken breasts instead of tenders, then knock yourself out... But, don't screw up the average rating with your 1 star B.S. because you're on a budget... I joined this website for some great recipes... If I want to be thrifty, I'll go buy some processed food at Aldi.... Get off of this site!!!

We get kind of chicken recipes, so I substituted petite sirloin sliced instead. I did everything else the same. It was wonderfully tastey and even my husbands new favorite sandwich!!

I always try any new recipe I find that has basil in it. This was wonderful and I will make it again. To Sharon from San Acacio I don't think there is a double standard at all. You can watch what you want and use the recipes you want. I think you are just a complainer. Sometimes I cook from scratch, sometimes semi homemade and there are also times I try to be very economical. I think you need to grow up and why are you even on here SINCE YOU DON"T WATCH!!!!

We made this yesterday for a casual lunch party with friends, & they were delicious. The chicken was so moist & flavorful. We used provolone cheese, both spinach & arugula, bread that we made from scratch, & accidentally forgot to include basil leaves. The paninis were still delicious!

If you really wanted to cut costs, you could raise your own chickens, bake the ciabatta from scratch, grow the veggies yourself, etc. But if you're as unconcerned with Sandra's "double standards" as I am, then just relax and follow the recipe. It's one of her better ones.
