Ingredients
- 1 medium red onion, thinly sliced
- 1/2 cup white vinegar
- 1 teaspoon chopped garlic
- 1/4 teaspoon red pepper flakes
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 cucumbers, thinly sliced
Directions
Add all the ingredients, except the cucumbers, to a small pot and bring to a boil over low heat. Turn off the heat, add the cucumbers and let sit for 1 hour. Serve chilled or at room temperature.

This is the time of year when veggies from the garden are abundant. I wanted something different for dinner than a salad...again.And this recipe is perfect! Its easy...quick..fresh....and delicious! i served it along side greens from the garden including arugula. And the peppery greens with the tart/sweet pickled onions and cucumbers was just perfect! Will be making this alot!

I wouldn't really call this pickled cucumber "salad", more pickled cucumbers. But I love this recipe. I have made it several times. It's quick and easy and very healthy. My husband loves it as well.

I added about 2 TB of sugar and skipped the garlic. It made my day. Red onion just hit it off. May try a little celery seed next time too.
