What a cool idea! I worked with what I had: mixed dough with Italian 6 cheeses, cut up summer sausage, mixed with little bit dried parsley, onion powder, garlic powder, Chili powder and a small cube of velveeta on every patty. Fold it as a pot sticker, rolled a bit. In a glass baking dish with foil/parchment paper, sprayed bit Pam olive oil.... OMG GOOOOOD!!!

We doubled the recipe and slightly changed it...we made an egg wash and sprinkled with cheese instead of mixing the cheese in to the dough...and we didn't have a grill pan so we just cooked them in a griddle for a little while.
Even doubling the recipe, we didn't have enough for our crowd. They were loved by the adults just as much as the kids! Perfect finger food...no mustard needed. They are even good cold.

Ok so this is what I did, I got the chedder lil smokies and made the 1/2 batch at a time with a pam sprayed frying pan and sprinkled all the smokies with franks hot sauce then mixing and browning on all sides. then I got 8 flakey layer biscuits from Pillsbury and quartered each one with my pizza cutter (you will end up with extra smokies, now you get a pie dish and cover it with sharp chedder cheese with each quarter of biscuit you press both sides into cheese THEN you roll into ball and spread with your fingers to completely cover smokies. Put seem side down on cookie sheet and bake as directed. There will be NO burnt cheese and very tasty!! These are EXCELLENT!!!!

These tasted good but were a pain to make. I had to turn them because they were burning on the bottom.
