    This pie was great. The whole family enjoyed it. I made the recipe and forgot to fold in half the whip cream in with the pudding; however, after a few hours inside the refrigerator I managed to fold it in. I think because of this error the pie didn't stand up too well. I mean when I went to cut it, it was a little running but overall perfect!o as far as taste. We love pina coladas and this recipe is a good non-alcoholic substitute even your kids can enjoy.

    OMG! Made this pie for Fourth of July cookout. I had to substitute regular pineapple juice for the pineapple-coconut nectar. It turned out GREAT! Everyone loved it and it reminded us of sitting on the beach in Mexico with our Pina Colada's. I would encourage everyone to try this pie!

    I knew I was skating on thin WT ice with Sandra Lee. I always make everything from scratch, but dared to try the whole instant pudding/cool whip thing....

    I made a cookie crust from macaroons, and that was the good part. The filling was too sweet and that pudding was just horrid. I even put in fresh pineapple and followed the instructions of the other reviews. It was just too fake for me. anyway....

    Emeril has a recipie on this site, and its called the Pineapple cream pie with a coconut crust. It is homemade and just grand. Also, I made a White peach blackberry pie (also from Emeril and it was pecked apart by the crowd so fast, I never got a piece...while Im stuck with a half of a sticky, yellow, too thick, dry, pie. Boo Sandra Lee!

    Lynda, this is not a health forum. You shouldn't even be rating this recipe. This is a great recipe. Make your own whipped topping to use. Everything in moderation is just fine.

    Due to the fact that Lynda from TX decided to express her professional opinion about a recipe she hasn't ever tried, I decided to give this recipe 5 stars to fix the rating since she gave it a 1 star without actually trying it!! Honey, just cause you dont like what it's made out of doesn't mean you should go around screwing up ratings! And by the way, you should get a life instead of finding recipes to pick on.

    Made this for the family. They loved it. Made it again and still good. I could not find the pineapple nectar, so used juice from sliced pineapples. Used vanilla flavoring instead of rum. It thicken almost instantly. Will make it for July cookout.I figured my weight watcher points as 3 for 1/6 of pie, so stayed on target. Wondereful!!!!!!

    No COOLWHIP in my version - and it is delicious!

    I just made this recipe and like Sandra I made a few quick modifications.
    I used a graham cracker pie crust (cut down on time and I think it will be really good.

    I used a large box of Jello INSTANT vanilla pudding IMPORTANT NOTE: IT MUST BE INSTANT OR IT WILL BE forever RUNNY.
    I only put 1/4 teaspoon rum extract flavoring and I used a whole can of regular Taste of THAI coconut milk and 3/4 can of the Kern's Pineapple Coconut Nectar (found nectar at Nugget Market.

    It thicken up almost instantly using a handheld wire whip... tossed in about a cup of coconut and poured it in the pie crust.

    Took less than 3 minutes to create this great pie with a light clean flavor - the filling is soooo good!

    I will serve with fresh~cut tiny pineapple pieces on top in place of the cool whip
    and that should add an added tropical flavor

    A great SUPER fast dessert - Good job SANDRA LEE

    I can't rate this since I haven't made it. As a healthcare professional I'm reminding you that you shouldn't eat Cool Whip or margarine because it is hydrogenated. Read your labels. Don't eat anything hydrogenated.

    A good friend of mine throws a Wacky Women Day party annually and this year I decided to try this out. I did have trouble finding the pineapple-coconut nectar, so I tried banana instead and made sure to add real rum instead of the extract. It received rave reviews. We all felt like we were on an island somewhere fabulous. I also used the 5.1 oz box of instant pudding mix and it was perfect. Thanks for a great recipe!

    I saw this on Sandra's cooking show , so I made it yesterday. I read some of the reviews first so I did make a few changes that I thought would help. I used the large box of vanilla pudding so it was not runny but just right. I chilled it for about 4 hours before eating. I also put the whipped topping (cool whip lite on the pie and then chilled it covered. I didn't use the rum extract in the topping or the toasted coconut , it was fine without either. There is a possibility you could have trouble finding some of the ingredients. I used the pineapple nectar and low fat coconut milk and with the coconut in the filling I thought the flavor was just right. It has a subtle pineapple/coconut flavor. if you wanted it to have more pineapple flavor , you could add some crushed pineapple drained as others have suggested. Or if you want more of the rum flavor , add more extract or add real rum. Overall , this is a good recipe and it can be changed to suit your taste. Thanks , Sandra lee for a good recipe and a great show.
