    I made it just as the recipe stated and it was DELICIOUS!!! The second time I did it on the stove in a pot and not in the pineapple shell and it was still PERFECT!!! Tasted GREAT!!! PLEASE do not rate recipes if you have not tried them...

    Bumped up the Thai seasoning (ok, not everyone likes it spicy hot, used half the cilantro and it was plenty. Ended up taking and cooking down just the soup liquid part to about half and we were much happier, thank goodness for comments here! Because of the reviews, we didn't start the seafood on the grill until we'd seen how the soup came out. If I were to make this again, I'd start with a double batch and cook the soup down more like to 1/3 original, sear pineapple chunks on hot grill briefly, and skip the pineapple boats entirely for the soup. Maybe a tropical fruit salad in a pineapple boat on the table for decoration.

    and pan seared everything. It added more flavor and texture. Bumped up the Thai seasoning a bit and added scallions (not a huge fan of cilantro. I didn't do any of this on the grill, as it looked like a safety hazzard. A big slice of pineapple for garnish. Darned tasty!

    We used regular coconut milk and old bay seasoning. Don't know if that made a difference. We thought it was very easy to make and tasted great.

    There was way too much cilantro for my tastes. The soup was swimming with it. Overall the flavors just didn't work well in my opnion and it was difficult to stomach.

    I was very disappointed with this recipe. I was expecting something similar to what I have enjoyed in Thai restaurants but it was nothing at all like that. Both the soup and the seafood were flavorless and boring. This recipe really needs some seasoning to make it edible. Soy sauce? Lime juice? Something. As is, it's horrible. Also, it would be a lot simpler to heat up the soup and ladle it into the pineapple rather than heating it up in the pineapple. One of mine tipped over on the grill and that was NOT a happy scene.
