This recipe is the best. I have made it several times with the main ingredient being mushrooms, asparagus, broccoli, and cauliflower.
The possibilities are endless.
If I could rate it a 10 star, I would.

made this today for christmas dinner tomorrow.....sooooooo good! used bacon fat instead of butter and used a little more garlic and some italian seasoning. delicious!

This soup is the best potato leek soup I have ever tasted, simple to make with great big flavors. I have made it several times before but this time added sorreno peppers which gives a nice "kick." The more aged it gets, the better it gets, again an outstanding soup for any occasion. Sanda Lee your the greatist!

I made a big pot of this soup on a cold night for a first course, and we had some unexpected guests drop in before we ate dinner (we tend to eat late. So it was the perfect thing to share with them, and we all ate yummy bowls of this sitting around the living room. My guests & hubby loved it! My friend Ruth even wanted the recipe. Thanks, Sandra Lee, for another winner!

I also thought it could benefit from a little bacon, but there is no reason it can't be added either into the soup or on top of it.
When I blended mine I left it a little chunky and called it a country soup. The flavors are wonderful and perfect for a cold day. Had it as a first course and several of my guests would have been just as happy having more as the main course.
The recipe is definately a keeper!

My family really enjoyed this soup (including the 2 year old!. I made it on a cold, snowy day, and I knew it would be appreciated! My husband, who likes lots of flavor, thought that it needed bacon (as some potato leek recipes do call for it. As for me, I would've cut back a little on the garlic. Overall, it was very good. Wish we'd had some crusty bread for dipping.

The hardest and most time consuming part was the leeks but it was delicious and will definetly make it again extremely easy and good compared to other more time consuming potato leek recepies makes a lot.

This soup is so easy to make, I love the shortcuts and the flavor is so mild just simply delicious. It's is great for those cold days.
