I had reservations about anything with boxed potatoes, but this has become a family favorite. I nearly doubled the recipe with very few minor changes, I used 2 envelopes of potatoes, 1 C of cream, and 6 eggs. The texture was light and fluffy, the taste was delicate and delicious! My suggestions to the negative reviewers are to use a little less cream and one less egg, make sure you use newly purchased potatoes and practice your technique. This is a savory souffle, it will not have the same texture as a dessert. BTW, no one could tell the potatoes were instant, but you can use "real" or prepared refrigerated potatoes. I also make it w instant sweet potatoes and it is equally delicious!

I made this for dinner last night...what a waste of eggs and cream! Everybody took a serving because it looked good but definitely not tasty. My Dad, who will eat anything, left his portion on the plate after only a few bites. YUCK! right to the garbage...and this from a family that doesn't believe in wasting anything!

I love this recipe and am suprised to see so many negative ratings in the mix. I've made it a few times now, but I must admit, rather than cream, combine 1/2 cup sour cream with 1/4 cup milk. Maybe mine is adding some flavor? I typically don't keep heavy cream on hand, but I've always got sour cream and milk, thus the idea. I think it bakes up beautifully in my small casserole dish, and tastes great. I'm eager to make it with left over real mashed potatoes someday to see the results, but with a two year old and one year old, the instant potatoes are for me at this stage in my life. Anyways, I definitely think it's worth trying out if you want to make a special dinner. :D

I made this with left-over garlic mashed potatoes. I don't know if that's the reason, but it was awful!!! It looked beautiful, but was inedible. It tasted like bread.

As is, this was not worth making again. It is very easy and impressive looking, but the instant potatoes makes this inedible.

With homemade mashers and cheese and more garlic, this is a hit.

I'm not that handy in the kitchen and I only look for easy recipes. I thought I would take a stab at this one and it turned out great! I can't wait to make this as a side for a dinner party. It looks impressive, but if I can do it, anyone can!

Served this dish with pork tenderloin and a salad. By using instant potatoes, I saved a great deal of time plus the egg yolks and cheese added a richness to the flavor. Thanks for a great recipe that I'll use for years.
