I made this dish again tonight. Went "Semi-Homemade" and used frozen grilled vegetables from my local grocery store (Wegmans. I also used whole wheat penne pasta. So dinner was delicious AND healthy!

I am a flavor fanatic, so I made a few additions. Roasted veggies (used carrots instead of the pepper-that's what I had at home, and added some flank steak. I marinated 1 lb of flank steak pieces in Worcestershire sauce, Italian seasonings, and cayenne pepper, before adding to the oil, garlic, and red peppers. Tossed with about 1/4 cup of Parmesan cheese! Delicious!

I watched the show as I was making lunch on Sunday. The recipe looked so good and had healthy ingredients that I just had to try it that evening. I didn't have any eggplant on hand and I didn't use the red pepper flakes so I added more garlic. At first taste it was a little bland but once it sat overnight and the flavors blended, it was very good. My husband and I really loved it and I will be making it again soon this time with whole wheat pasta.

This receipe calls for Red Peppers, however, on the show Sandra mentioned using Green Peppers to save money.

I thought this was excellent. However I did 2 things differently. I roasted the veggies instead of grilling them and added 1/2 can of italian diced tomatoes I needed to use up from the night before. I also made Sandra's cheesy garlic bread from the site. Very appetizing and flavorful. Will be making this again.

This recipe was sooo good and very simple. Plus it was cheap! Instead of eggplant I used a squash. Also, at the end I added fresh parmesan. This will become a weeknight staple at our house!

Yummy! I added parmesan/romano at the end. And roasted the veggies vs. grilled. And I added shrooms! Awesome - thanks Sandra!

We tried this recipe and didn't find it flavorable at all. After looking at some of the comments on here, I decided to add tomatoes-that still didn't help. Perhaps adding chicken or something!

After watching the program my hushand ran right out and got eveything for the dish. I added one large grilled chichen breast. We both enjoyed it very much. The only thing I would do different would be to grill some tomatoes.
