GREAT recipe!! Thoroughly enjoyed the leftovers!! I would make risotto again just to enjoy the risotto cakes!

My kids LOVE rice, so I used leftover plain rice - made these for breakfast with a side of yogurt and fruit - 3 happy boys! May sound odd - but whatever gets the school day off with a smile!!

Good way to use up the leftover risotto. I did have to add more cheese and bread crumbs to get the right consistency, which took away from the flavor of the risotto - but - they were still tasty. I should note that the risotto recipe I used was a gorgonzola and portabello - not the one specified in this recipe. I suppose the amount of dry ingredients needed depends on how "wet" your risotto is when you start out.

This recipe is so easy and a great way to use your leftovers, especially if you make a whole batch of risotto for two people. If you are missing the protein in your meal, mix it in with your risotto before you make your cakes! I make a mushroom sausage risotto and a prosciutto spinach risotto, both which turn out into perfect cakes the next day!
As for the falling apart issue, watch the video. You have to have the proper cake consistency and let it brown enough before you try and flip it.

As I read that others were having a hard time keeping theirs together, I thought I might try something....I coated the outside in breadcrumbs as well, and it worked! This was great and was nice to have as a leftover and not feel like I had leftovers.

All I have to say is yum! The one issue I had was them staying together. Other than that this recipe was awesome. For those who tweak a recipe and then review, well maybe you could just do it exactly the first time. Then after that take notes on what you might like better. It works for me.

These were wonderful ! I planned them as a side, but I liked them so much I skipped the main course. I thought sour cream on top would be good also, and maybe some chopped chives, but I didn't have either of these and loved the cakes anyway.

I have to say something here.
When you do not make the the recipes the way they are given and add other things to them and then you all crab about the way it tast or that it didn't come out right.
What do you expect??????

I had trouble keeping them together too. They just tasted like fried...anything. The risotto was so flavorful last night but when you fry it up like this it tastes bland. I topped them with sour cream to make them more interesting.

May I just say.... I have never written a reveiw before, and I just had to this time... because of one of your reveiws.. I just have to add, this was a great way to use the left over, and I was VERY pleased with the outcome, of couse I must add that I always add a twist of my own but I LOVED this dish... Thank You Sandra!!
