This is good.........but add mild or hot Italian sausage & 1/2 cup onions and it's a 5 star!!! (a dash of red wine wouldn't hurt.

Made this recipe as a side dish and loved it! Then I made it again without the burger mix for my vegetarian daughter and loved it even more! The olives give it a wonderful flavor and the zucchini is cooked perfect, soft but not soggy.

I made these as a side dish and they were delicious! The only thing I did different was after scooping out the seeds, I put them on the grill to soften them before stuffing and putting them in the oven. I also used panko bread crumbs. The stuffing is amazing though!
