    I absolutely loved this meat loaf. My husband says it's the best meat loaf he's ever had...and he's had lots. Even my 11 month old couldn't get enough of it! This meat loaf is super moist and has the best flavor...it must be the onion compote. I didn't have red onions so I used yellow ones, but it still turned out wonderful. The ketchup in the meat also adds just the right amount of sweet and tangy flavor. This will be my new meat loaf recipe, for sure! Leftovers tasted just as good, if not better, the next day!     First and foremost I want to comment on two of the prior reviewers on here. I am not sure why they felt that it was "gross" and "horrid" considering they really didn't explain why...
    However- I didn't feel that their reviews were helpful. At all.
    So this is what I will say about the recipe.
    This is not like any meatloaft I have ever had before. It was moist...sweet, savory and flavorful.
    Meatloaf in the past...has been overcooked...dry...and required a bunch of something or other over the top to make it decent.
    This meatloaf didn't require anything to "doctor" it at all.
    Perhaps not everyone would care for a sweet and very moist/fall apart meatloaf...but it was delightful the first day and also perfect the next day between a toasted whole wheat bun.

    We made this recipe a couple of weeks ago and my husband loved it. He asked me to make it again this week! I'm not really a meatloaf person but I thought it was pretty good as well. We added a bit of worchestershire (sp? because that is how his mom makes meatloaf. Thanks Sandra!
