these were tasty and simple! My mom used to make potato cakes the morning after we had mashed potatoes for dinner...which was often!

I added chopped onion to the potato mixture and some gated parmesan cheese to the crust. We loved them!

I did add the egg as was suggested. They turned out great! Next time I think I will try grating some onion into them.

We used the leftover taters from thanksgiving. came out very tasty but had to add an egg to help hold them together. crispy outside and creamy inside. be carefull the breadcrumbs will burn easly if you have the oil to hot
