A friend was emptying out her refrigerator before leaving for vacation, and dumped her canned biscuits on me. I had strawberries on hand, so decided to use the biscuits to make shortcake just to get the tubes out of my fridge. Whoever said biscuits are traditional for shortcake is right, but THESE biscuits are not. I'll stick to my homemade, sweetened biscuits. As for the actual recipe, the point of mixing the sugar and berries ahead of time is not to "allow the flavors to meld," but rather to create extra juice for the shortcake. Did not bother adding sour cream to Cool Whip to make a topping - I buy neither - just quickly whipped up some real cream and sugar.

We liked this semi-homemade shortcake recipe. Thanks! There wasn't one bit left on any plate :

This shortcake was meant to be the dessert served at last night's canasta party. No one said anything, but most scraped the Cool Whip and strawberries off the biscuit. I ended up throwing away most all of the biscuits. I think the recipe is just fine, but for the canned biscuits.

The biscuit and the sour cream and the excessive amount of sugar are reasons I won't use this recipe again.

The biscuits were too dry and salty to make into a desert.

I omitted the sour cream and used those little hostess shortcakes. I was pleased with how it came out.

This shortcake. I've never had better. I didn't realize until now that sweetening your bisquits is sweetener overkill for shortcake. The every so slight benign saltiness of the bisquits actually makes the sweetness of the strawberries and the topping taste that much sweeter tasting. Perfect together!
