This was pretty good.
I made a few changes to make it more healthy. Used turkey sausage, substituted two egg whites for one of the whole eggs, used whole grain baguette, and 1% milk. Doing it this way came to 136 calories per muffin.
For flavor I added a slightly caramelized onion to the mix, and added four minutes of cooking time under the broiler to give it a crispy bread-like top. Instead of Italian seasoning I used a mix of Cajun seasoning Mrs. Dash.
Next time I'm going to make the muffins smaller because some of them were gooey on the bottom.

I made this for breakfast this morning with leftover mushrooms and breakfast sausages I had. It so easy and my family said "it's like stuffing without the turkey". It's so flexible, I can see making this with all kinds of leftover bits of things that I have in my fridge!
