Serve in a martini glass for the wow factor. Add some jalapeno and jicama for some zip and crunch. Super easy crowd pleaser.

Even better with homemade Pico, and added diced pineapple

Thought it was good as is but that it would be better with a punch. Tried it with leftover shrimp grilled with Thai seasonings and wow!

We love this one - it's super simply and delicious. Serve it alone, on crostini, or even in a nice whole wheat wrap. It's a winner.

Anyone who has made traditional ceviche will love the ease of this recipe. It is very authentic tasting. Loved it!

This recipe is absolutely delicious when prepared with high quality ingredients. You MUST use fresh style pico de gallo (usually near the refrigerated salad dressings in my grocery store and I always use fresh steamed wild shrimp from my local fish market. I get rave reviews everytime I make it. Get your shrimp at the fish market pre-cooked, steam your own using frozen raw in the grocery store, or at the very least, season pre-cooked frozen and microware for a minute or two to bring them back to life. If you use the standard defrosted frozen, pre-cooked shrimp at the grocery store, you'll be disappointed.

This is one of the better ceviche recipes I have made! I did make a quick homemade pico de gallo to use. Wonderful recipe!

This is a salad, not ceviche, but call it whatever you want and it's still not good. No one liked it.
