Ingredients

  • Nonstick spray
  • 4 (6-ounce) skinless sole fillets
  • 1/4 cup melted butter
  • 2 lemons, juiced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground nutmeg
  • 1 cup slivered almonds, roasted
  • Fresh chives, chopped

Directions

Preheat broiler. Spray a large, shallow baking dish with nonstick spray.

Place fillets in dish. In a bowl, combine butter, lemon juice, salt, pepper, onion powder and nutmeg. Brush fish with sauce, reserving half. Broil 6-inches from heat for 4-6 minutes, just until fish flakes. During last minute or so of cooking, stir roasted almonds into remaining sauce and spread over fish. Sprinkle with fresh chives of choice before serving.

    I sort of made this tonight for my family. I used salmon instead of sole and crushed filberts (hazelnuts instead of almonds. I only had two fillets and I used 1/2 of a lemon instead of two lemons and I didn't have any nutmeg (and wasn't about to try allspice which is all I had. I didn't have onion powder, so I used garlic powder. My father absolutely went crazy over this. My husband is allergic to any kind of nuts so I left them off of his, but he liked it too. Thanks Sandra, I love your stuff!

    I think this a great recipe for people who don't like fish but want to improve thier diet. It has no fishy taste is geat with side salad. Easy and quick to prepare makes you look like a gourmet cook.
