I made the mistake of not using INSTANT tapioca, so the tapioca pearls were solid and gross-looking. The flavor of the pie was wonderful though. I used fresh peaches instead of frozen and it worked well.

I was skeptical of using frozen fruit - but it worked great! Make sure you very finely chop the crys. ginger. I used pre-made pie crusts, it took a little longer to bake than in the recipe, but came out golden, bubbly and wonderful! Sandra has done it again!

The tapioca was like squishy marbles in my mouth. I wanted a smooth creamy texture in the filling.

I loved it I replaced the tapioca pudding with lemon and it was fantastic.
