    These went fast! Fortunately I tasted a few as I was cooking or I wouldn't have gotten any :

    Used 1.5 lbs of skirt steak and there was plenty of seasoning to go around. We substituted regular steak seasoning (vs. spicy, so our sensitive guests could enjoy and it came out a bit too salty, will adjust proportions next time--probably to half the amount of steak seasoning.

    The steak sauce tasted almost like pesto, which was so-so with the steak, but the remoulade was a great pairing [added a bit more hot sauce to make up for the lack of spice on the steak].

    This recipe is great and so easy. I used flat iron steak and it works wonderfully.
