    This recipe was great! I'm 8 months pregnant and have 5 other hungry little ones under 10 yrs old. I made this dish as I've been looking for dishes that I could have while dealing with gestational diabetes and the family would like as well. We doubled the recipe and made two but next time we'll need to make 3 as they LOVED it. My blood sugars were great afterward and well within the safe limits, which has been difficult to do lately.
    We enjoyed this dish with a side of green salad.

    I really love this receipe as well as my family. We have had it for lunch and dinner. I would recommend this one to anyone. Easy and so cheap to make and healthy too! Great one Sandra!!! :

    This was the perfect dish for my brunch with friends, alongside grilled beef tomatoes & portabella mushrooms. I added pieces of pastrami beef into the egg mixture & I used fresh spinach leaves. Instead of milk, I like to use half & half or cream :-

    I did modify after reading the reviews. I cooked 2 slices of bacon and crumbled it in th egg mixture. I used the drippings to saute the onions. I reduced the oil by 1 tablespoon since I used the drippings. The potato crust on the bottom is delicious. My husband doesn't usually like spinach, but really liked this dish. We'll make this again. I'm on WeightWatchers and this recipe fit in just fine, including the bacon. It is loaded with filling foods so it was satisfying. Add fresh fruit and a glass of milk on the side and it's a great meal.

    Loved it - easy - quick and fabulous. The only think I did different was to add some Hatch green chilies since I'm from New Mexico. It's a full meal deal - no need for anything else!

    I love saving money! Especially in times like now!! I loved the frittata! I did make a few adjustments based on the reviews I read. Firstly, I cooked up some turkey bacon and crumbled that in. I also sauteed some mushrooms and red pepper and put that in as well. I did use a little more spinach to get that extra green! I then added two more eggs and a little more milk to compensate the extra ingredients. This is now my husbands favorite thing in the world to eat!! He has requested this three times in the past two weeks!! This one is definitely a keeper!

    I diced and cooked 4 slices of bacon along with this recipe as other's suggested. I knew my husband wouldn't eat it without meat. Turned out very good. Even my 2 yr old ate it! However, next time I will cut the recommended salt down since the bacon added plenty of salt on it's own. Thanks Sandra!
