Just made this for lunch, and was it ever tasty! I especially loved the potato crust and using spinach made me feel as if it were healthier than it probably was!? This is definitely a keeper. Love Sandra's new show about saving money and have loved her since learning about her challenging childhood. She's a winner and survivor. Thanks for the wonderful recipe.

Very quick and easy to make for breakfast, lunch, side dish or supper. Spinach flavor is present but not overwhelming. Even made it more figure friendly by using egg whites substitute for 4 regular eggs and low fat mozzarella. My husband isn't a huge salt user so you may want to slightly reduce amount of salt you use in recipe so people can salt according to taste when you serve it.

I am not a big fan of spinach, but I enjoyed this dish and so did the rest of my family. This is a new way to get the kids to eat their spinach! Would be great for brunch and can be used as a side dish or as a stand-alone meal. Relatively easy to prepare too!
