I thought it was really good. I made my own vinagrette with grape seed oil and balsamic vinegar and then added the cocoa. It gave it a nice deep flavor.

I know I should probably try this before commenting, but I just watched the show, and this looked as unappetizing as I have ever seen anything on Food Network. The flavor combinations sound good, but the dressing on the salad looked like ...!! When she said it tasted as good as it looked, that left a little to be desired. Anyone in the food industry will say that you eat with your eyes first and if that is the case, my guests and I would surely go hungry. I would never serve anything that looked like that!! EEEEEEEEEEWWWWWWW!!!!!!!!

This salad is perect for entertaining. I added some red onion to the mix and it contrasted nicely with the dressing. Also, I used pecans instead of walnuts. I added a tablespoon of cocoa powder and a pinch of white sugar to the following balsamic vinaigrette recipe. It was so good, I'm taking it for lunch tomorrow.
    Ingredients:
    ?2 Tablespoons balsamic vinegar
    ?1 Tablespoon red wine vinegar
    ?1 Tablespoon Dijon mustard
    ?1 teaspoon light brown sugar
?1 garlic clove, crushed through a press (optional
    ?1/2 teaspoon salt
?1/4 teaspoon freshly ground black pepper
?3/4 cup extra virgin olive oil
    Preparation:
To make the vinaigrette, in a medium bowl whisk balsamic vinegar, red wine vinegar, Dijon mustard, brown sugar, garlic, salt, and pepper until mixed. Gradually whisk in the olive oil until smooth.

The Salad combo is delicious but the dressing is horrible. I made my own dressing instead.

I also made my own balsamic dressing and then added the cocoa-so good! And the balance of mange with the dried fruit and nuts is awesome-and pretty!. Definitely will make again.

When I saw this on the show, I could not believe putting cocoa in salad dressing could possibly taste good. Had to try it. I made my own from some really fine balsamic vinegar and olive oil, added cocoa and spices and it was incredible! And how much fun is it to tell your guests that they're eating chocolate dressing on their salad! Fantastic recipe!
