This is a FANTASTIC & super easy cake to make. I was worried after reading some of the 'bad' reviews but don't listen to them!!!! I followed the recipe to a 'T' and got rave reviews about the cake (it was the first time I made it too. I was impressed and will definitely make this cake again. Didn't make the topping/icing, tofu isn't my thing, but made it with a creamchz frosting and it was delish! Give this recipe a try!

"Healthy" cake means healthier than using a bunch of butter or oil, not as healthy as a plate of steamed broccoli, and so this cake is considered healthy for the other options out there. If I'm going to eat cake, I might as well eat a healthier version!
Make sure to pat dry the zucchini after grating it so the cake isn't over-moist. Also, I tried the mousse with tofu (first time eating tofu ever and absolutely hated it. As Sandra said in the show, you can also use yogurt. If you're not a tofu fan, use the yogurt!! : That recipe for "frosting" has become my go-to for every cake/cupcake because it is so much healthier than the trans-fat laden crap you can buy in the stores and so fluffy and light. I omit the cinnamon now(which was a little bit much for me and experiment with different yogurt and pudding flavors.

Hubby is diabetic and we are both watching our fat intake, so it is very difficult to find a dessert that we can eat and enjoy.
I seem to be able to read a recipe, or see it on ty and taste it in my mind. (Know that sounds stange, but it works for me!
I haven't made this yet, but it sounds like a winner.
Have to pick up some ingredients and then will give further feedback

I was very pleased with this cake. It included lots of healthy ingredients and tasted homemade delicious. The mousse was an elegant addition that could be made prior to dinner. A great addition to a party or pot luck gathering.
I will definatly add this to my recipe box.

I tried this recipe for my daughter and her friends and everyone absolutely love it. It tasted as good as any chocolate cake and the fact that it was a healthy version makes it even better. I will definitely keep this recipe in my recipe box.

I used Devil's food cake, soy milk instead of yogurt and light sour cream to replace the tofu in the mousse. Just tasted it. It is great. This is my new chocolate cake from now on.

I've got zukes growing in my garden, and my stepdaughter made a big fuss about eating zucchini in any form. So for her birthday, I made cupcakes with this recipe, and they turned out awesome! No "green worms," no sogginess (although they are super-moist, but in a good way!, no problems at all. I did make a few changes. No cinnamon, because these are kids' cupcakes and it's all about the chocolate. I used a triple chocolate cake mix, used egg beaters in place of the whites and whole egg, and used lowfat vanilla yogurt. The zuke I used was freshly picked and extremely juicy, and I used a grater that grates super-fine, so it was more mush than gratings, which helps I think. I squeezed out most of the water from the mush before putting it in. I was concerned there would not be enough moisture because the batter seemed kind of dry, but all went well. Cooked them an extra couple of minutes to make sure they weren't undercooked, and no one knew there were fruits and veggies and yogurt in there! We used regular frosting because the kids would have hated the cinnamon stuff, but the cakes were moist enough to be delicious even without any kind of frosting. Will definitely try this out on other cakes and flavors!
